Description
Oven roasted zucchini stuffed with delicious ground meat and topped with mozzarrella cheese.
Ingredients

ground chuck
(or any ground beef)

red onion

Instructions

Zucchini
Preheat oven to 375 degrees farenheit.
Prepare a baking sheet. Cover with foil and spray with non-stick coconut oil.
Cut zucchini in half length-wise.
With a spoon, scoop out the seeds of the zucchini creating a dip in the zucchini where you will be able to put in the cooked meat.
Place the zucchini face down (peeling side should be facing up).
Put baking dish in oven and roast zucchini until soft, about 15 minutes.
While zucchini is cooking, cook the meat.

Ground Beef
Add ground chuck to a skillet. Brown chuck until all pink is gone.
Drain ground beef in a colandar and rinse with hot water.
Add chopped onion to skillet and cook until softened, about 5 minutes.
Add minced garlic, and cook until fragrant, about 1 minute.
Add Roma tomato, and cilantro. Cook for about 3 minutes or until tomato is soft.
Then add the spices, cook for about 1 minute, stirring the whole time.
Add in the ground chuck, and 1/2 cup water. Bring to a boil and then turn heat down to low. Cover the skillet and cook for about 15 minutes.

Assembling Zucchini Boats
Once zucchini has finished roasting, take out of the oven.
Turn zucchini right side up.
Fill each dip in the zucchini with the meat, spreading evenly throughout all the zucchini boats.
Top each zucchini boat with shredded mozzarella.
Place baking pan into the oven and cook until cheese is melted and a bit browned, about 15 minutes.
