Stuffed Zucchini Boats
Description
Oven roasted zucchini stuffed with delicious ground meat and topped with mozzarrella cheese.

Zucchini
- Preheat oven to 375 degrees farenheit.
- Prepare a baking sheet. Cover with foil and spray with non-stick coconut oil.
- Cut zucchini in half length-wise.
- With a spoon, scoop out the seeds of the zucchini creating a dip in the zucchini where you will be able to put in the cooked meat.
- Place the zucchini face down (peeling side should be facing up).
- Put baking dish in oven and roast zucchini until soft, about 15 minutes.
- While zucchini is cooking, cook the meat.

Ground Beef
- Add ground chuck to a skillet. Brown chuck until all pink is gone.
- Drain ground beef in a colandar and rinse with hot water.
- Add chopped onion to skillet and cook until softened, about 5 minutes.
- Add minced garlic, and cook until fragrant, about 1 minute.
- Add Roma tomato, and cilantro. Cook for about 3 minutes or until tomato is soft.
- Then add the spices, cook for about 1 minute, stirring the whole time.
- Add in the ground chuck, and 1/2 cup water. Bring to a boil and then turn heat down to low. Cover the skillet and cook for about 15 minutes.

Assembling Zucchini Boats
- Once zucchini has finished roasting, take out of the oven.
- Turn zucchini right side up.
- Fill each dip in the zucchini with the meat, spreading evenly throughout all the zucchini boats.
- Top each zucchini boat with shredded mozzarella.
- Place baking pan into the oven and cook until cheese is melted and a bit browned, about 15 minutes.

- Serve with cooked rice.
